Thin Mint Cookies

1/2 c. Earth Balance Butter

1/4 c. sugar

1 Ener-G Egg Replacer (powder)

1/2 t. vanilla

1/2 t. peppermint extract

1 c. flour

1/4 t. salt

1 square unsweetened baker's chocolate, melted

1 10oz. bag of dark chocolate chips/chunks

Directions:

Combine Earthy B and sugar together until light and fluffy. Add vanilla and peppermint extract and combine. Add melted chocolate, flour, salt and egg replacer and combine until dough forms. Roll dough into tablespoon size balls and place on parchment lined baking sheet. Flatten cookie balls using palm. Bake at 350 degress for about 13 minutes, or until cookies are just slightly browned on the bottom. Allow to cool.

While cookies are cooling, melt the bag of dark chocolate chips in a pot. Take each cookie and cover entirely in melted chocolate. Place cookie on cooling tray and allow to sit until chocolate hardens. Enjoy!!
