Ready for Thanksgiving and sweet potato casserole, but that's too far away and much too time consuming?
Try my individual sweet potato casserole! It's easy to make, all you need is a microwave and a spoon. It's quick, too!
Individual Sweet Potato Casserole
1 sweet potato, cooked (microwave for 8 minutes)
1 T. unsweetened applesauce
1 t. crushed almonds
1 t. unsweetened coconut
A dash of cinnamon
1. Slice sweet potato down the middle.
2. Mix in apple sauce and cinnamon.
3. Sprinkle almonds and coconut on top.
It's pretty good, and I like that there is no actual sugar in this recipe. You still get the sweetness but without the sugar! :) Feel free to sprinkle on some Dandie's vegan marshies if you want and then microwave again before eating! (Just make sure you do this BEFORE adding the coconut and almonds!)
