These snowball cookies have an extra "oomph" because they contain lots of lime juice and coconut flakes! I used a dried, unsweetened coconut flake for these. It makes pretty many, too - at least 2 dozen or so, I'd say! Perfect for Christmas, New Years, or whenever!
Coconut Lime Snowballs
1 cup(s) ofEarth Balance Buttery Spread
2/3 cup(s) ofpowdered sugar
2 tsp. ofvanilla
1/4 tsp. ofsalt
1 tbsp. ofEarth Balance Soy Milk
1 3/4 cup(s) ofall purpose flour
1 cup(s) offinely chopped walnuts
3 T. + 1 tsp. oflime juice
3 tbsp. ofcoconut flakes
1 1/2 cup(s) ofpowdered sugar (for rolling)
Beat together Earth Balance spread and powdered sugar in a bowl.
Add remaining ingredients and mix together.
Place tablespoon sized balls of dough on a parchment lined baking sheet and bake in a 350 degree oven for 8-10 minutes, until golden brown. Cool completely.
