Well, after a bit of searching, I found a recipe that seemed pretty reliable and easy to make. You know what? It turned out great! My recipe is just a halved version of the original. Try it for yourself. I think you'll really like it!
Vegan Sweetened Condensed Milk
Based on this recipe.
1 can coconut milk
1/4 c. agave nectar
1. In a medium size saucepan, combine coconut milk and agave. Heat over medium-low heat until the mixture beings to bubble, then continue to cook until mixture is reduced by half.
2. Cool to room temperature and store refrigerated until ready to use.
This is ridiculously easy to make, but it does take quite a bit of time to reduce. Just have patience. It will be worth it in the end! It is thick, creamy, smooth, and really, really good.
